Class Definition: This is a professional position performing administrative work in the operation and management of the Dining Hall. Work involves planning, organizing and directing the operation of the Dining Hall. Supervision is exercised over subordinate workers engaged in the cooking, cleaning, security, and advisory functions of the Dining Hall. The work is performed with independent judgment under the general direction of the Comptroller who reviews work through written reports, discussions, and analysis of work completed.

Duties:
  • Direct and manage the Dining Hall that include supervising the cooking of food, cleaning and maintenance of equipment, cooking and eating areas.
  • The DH Manager is responsible for inventory control of food items and supplies. This includes maintaining proper levels of items needed to provide a quality service. Preparation of purchase orders to meet the needs of the unit.
  • Coordinate the daily activities for the unit and special requests from student groups. Plan, coordinate and direct the activities for special events that require food preparation and serving.  Events such as graduation and providing meals for special visiting groups.
  • Prepare the unit’s budget and maintain budgetary controls. Establish measurable performance outputs that relate directly to the budget.
  • Responsible for all supervisory matters including the preparation of annual performance appraisals, insuring that appropriate policies and procedures are applied, and staff disciplinary matters. Ensure that all health certificates are current and do not lapse. Recommend changes to the operations that will improve service and generate additional revenue. Responsible for maintaining proper levels of staffing to properly cook serve and clean.
  • Prepare weekly menus and minimize the need to change menus once they have been approved. The manager will coordinate the preparation of meals that are nutritious and offer a variety of meals that will appeal to the student body, faculty, and staff. Perform other duties as assigned including serving on committees.
Minimum Qualifications:
Bachelor’s degree from a US accredited four year institution and at least 5 years of experience managing and cooking in a comparable quantity type of dining hall. Knowledge of: principles and practices of food service operations; sanitation and safety practices; principles and practices of menu planning; purchasing and storage of food and supplies, inventory control, principles and practices of sound nutrition and dietary requirements; principles and practices of supervision. Ability to: plan, organize direct control and coordinate food service functions; train, supervise, and evaluate the work of others; plan menus; keep accurate records; prepare budget and operational reports; deal effectively with students, faculty and staff; and use of personnel compute.  Knowledge of word processing software and spreadsheet applications preferred. OR, any equivalent combination of education and experience which provides for the above.
